Risk of salmonella poisoning in prepared meats
The vast majority of prepared meats, such as salami, chorizo, prosciutto, and biltong, are safe to eat, but a very small proportion contain salmonella or unsafe levels of lysteria, a Health Protection Agency report has found.
The study tested almost 2,500 meat products for salmonella, lysteria, staphylococcus aureus and E. coli, and found that 99 per cent were safe to eat.
But a small proportion were contaminated enough to make anyone ill who ate them, the study concluded.
HPA director of food, water and environmental microbiology services, Dr Jim McLauchlin, said: ‘It is important that manufacturers ensure the product doesn’t become contaminated before final packaging and retailers store the meats correctly.’
