The British Dietetic Association has published guidance on food provision in care settings.
The Nutrition and Hydration Digest: Improving Outcomes Through Food and Beverage Services is primarily aimed at dietitions but the BDA said other healthcare professionals, including nurses, would find the document “forward-thinking and inspiring”.
It includes sections on menu design, different texture of food, and cultural and therapeutic diets.
Report co-author Maxine Cartz, BDA Food Counts specialist group member, said: “Knowing about food and the basic principles of food service should be common to all dietitians.
“Nurses, speech and language therapists and others interested in delivering excellence in food and beverage services will also find it inspiring,” she added.
